My favorite comfort food before the gluten-free diet was spaghetti and meat sauce. Now that I have learned to properly cook gluten-free pasta, I am happy to say it remains my favorite comfort food. It’s my daughters too so when I cook I get a double dose of comfort because even with her busy schedule she can’t pass up on spaghetti and meat sauce with mom! My second comfort food is Udi’s bagels, toasted and topped with dairy free cheddar, eggs and bacon…. yum!
